Tofu mayonnaise with pinzimonio

Ingredients for 4 people:
  • 300 g soft tofu
  • Apple vinegar with the vinegar mother Mengazzoli
  • ½ lemon
  • ½ clove of garlic
  • extra virgin olive oil
  • salt and pepper
  • Belgian endive salad
  • carrots
  • Fennel
  • Celery

Drain and rinse the tofu in water. Bring the water to boil and blanch the tofu for 30 seconds. Drain the tofu and dry it. Blend together tofu, Apple vinegar with the mother, lemon, salt, pepper and oil to obtain a soft and homogeneous cream. Wash, clean and cut the vegetables for the pinzimonio and serve them with the obtained mayonnaise.
