Sweet and sour pineapple

Ingredients for 4 people:
  • 1 pineapple
  • 200 gr of shelled shrimps
  • 1 small bunch of Corn salad or another kind of salad
  • 200 gr of smoked bacon or vegan bacon
  • 2 spoons of mayonnaise
  • 2 spoons of cane sugar
  • Extra-virgin olive oil
  • Mengazzoli Pomegranate Vinegar
  • Leaves of lettuce or similar salad
  • Salt and pepper

Cut the pineapple in half lengthwise. Remove the pulp from the fruit, cut it into little cubes and put them into a bowl. Cut the bacon into strips and brown it into a pan with a little butter.  Remove it from the pan. Mix the shrimps in the same cooking juice and simmer them with Mengazzoli Pomegranate Vinegar. Remove the shrimps from the pan. Put the pineapple cubes into the same pan and raise the burner. Add two spoons of cane sugar and caramelise slightly. Put the shrimps, the bacon, the Corn salad and the pineapple cubes into a bowl and season with a sauce made with oil, salt, pepper and mayonnaise. Cover the inside of the pineapple with lettuce leaves and distribute the mixture.
