Squids seasoned with Malvasia vinegar

Ingredients for 4 people:
  • 4 fresh squids, 250 g each
  • 3 anchovies
  • 250 g of grated bread
  • 2 peeled pine-nut spoons
  • 1 clove of garlic
  • 2 spoon of currants
  • 2 spoons of salted capers
  • 1 bunch of parsley
  • A pinch of wild marjoram
  • extra-virgin olive oil from the Garda
  • salt
  • pepper
  • wine vinegar Malvasia I.G.T. Veneto
Preparation of seasoned with Malvasia vinegar

Soften achovies in a pan with some warm water. In a different pan toast the grated bread. Well clean the squids, empty, chop the tentacles and fry in a pan with oil. Add the anchovies, pine-nuts, currants, capers, grated bread, garlic, chopped parsley, wild marjoram and salt.

After a few seconds, remove from the flame, mix well. The mixture is to be used to fill the squids, close with a toothpick as not to allow the stuff to come out.

Place in a pan after frying the onions. Add salt, pepper and season with a sauce made with wine vinegar produced with Malvasia I.G.T. Veneto and extra-virgin olive oil from the Garda area, place in an oven for about 30 minutes.
