Pork Shin with Apples

Recipe for 4 people:
  • 1 (or 2) knuckle of pork with bacon rind
  • 1 small onion, 1 branch of celery, 1 carrot
  • 4 apples
  • Extra virgin olive oil
  • 1 ladle of appropriately salty broth
Cooking procedure:

Sauté onion, celery and chunked carrots in a deep saucepan containing the shin. Add the broth and, when it is boiling, sketch the shin in. Cover and let simmer slowly, by pouring from time to time the broth until the shin is cooked. Remove it from the pan.
Strain the bottom to remove the vegetables and, after doing so narrow as one not too thick syrup, salt it and pour in six spoonful of APPLE BALSAMIC VINEGAR
Put the shin in a baking dish containing it together with the apples cut into slices and brush everything with vinegar sauce. Put the pan in the hot oven at 180 °C until the apples are cooked and the shin is browned. Halfway through cooking, remove the dish from the oven, and turn the shin and brush it on the other side. 
Bring the course to the table in the baking pan spraying them with the sauce.
