Pineapple delicacy

Ingredients for 4 people:
  • 500 g pork loin cut into pieces
  • 1 small pineapple
  • 6 spring onion
  • 1 tablespoon of brown sugar
  • Apple vinegar with the Mother Mengazzoli
  • extra virgin olive oil
  • salt and pepper

Clean the spring onions and cut them into thin slices. Peel the pineapple and reduce it into cubes. In a pan heat the oil to brown the onions, add the meat and brown over high heat. Adjust salt and pepper, add the pineapple and sugar, deglaze with the vinegar and let it evaporate. End the preparation by gently caramelize the meat.
