Ingredients for 4 people:
  • 400 g Casareccio bread in slices
  • 1 red onion, cut in slices
  • 6 leaves of basil
  • 3 ripe peeled tomatoes
  • 1 cucumber
  • 1 spoon of apple vinegar
  • 3 spoon of extra-virgin olive
  • salt
  • pepper
Preparation of Panzanella:

Put the bread slices in a pan and cover with some cold water, soaking the bread for about 15 minutes. Meanwhile cut the onion in slices and tomatoes, after removing the seeds. Add the sliced cucumber in a dish and salt, finally covering with a weight. Let it there for 10 minutes (to remove water). Rinse the bread well with the hands, paying attention not to cut the slices, move to a salad bowl.

Rinse the cucumber, dry and add to the bread with tomatoes, onion and chopped basil leaves. Serve with extra-virgin olive oil, vinegar and pepper. Serve after 10 minutes as  to allow bread to season.
