Little flans of taleggio and gorgonzola with onions

Ingredients for 4 people:
  • 120 g Taleggio
  • 100 g Gorgonzola
  • 3 eggs
  • 250 ml milk
  • 50 g butter
  • 50 g wheat flour
  • 4 sweet red onions
  • Apple vinegar with the Mother Mengazzoli
  • 1 tablespoon brown sugar
  • dry white wine
  • extra virgin olive oil
  • salt and pepper

Preparation:
Slice the onions and brown them into the oil. Add the sugar and deglaze with the vinegar. Allow to evaporate, then caramelize the onions over low heat.
