Codfish fillets with pomegranate vinegar

Ingredients for 4 persons:
8 cod fillets (also frozen)
3 tablespoons of Mengazzoli Pomegranate Vinegar
2 tablespoons of extra virgin olive oil
1 pomegranate
Seasonal salad

 
Preparation:
Marinate the cod fillets with pure pomegranate vinegar.
Heat a pan and when it is hot use it to grill the fillets (there is no need to dry them after marinating) cooking them a few minutes per side.
Remove the cod from the plate. Using a kitchen brush, flavour the fillets still hot with extra virgin olive oil. Take half of the seeds, previously extracted from the pomegranate and throw them on the pan for a few seconds. Once removed from the pan, mix them with the other part of fresh seeds.
Place the grilled fillets on the salad, add the pomegranate seeds and finish by sprinkling the dish with Mengazzoli Pomegranate Vinegar.
