As a long-lasting vinegar-making company, Mengazzoli have resolved to establish and implement EGOCALO, a proprietary certification system allowing to find out and determine any contents allowing to better classify its own product lines.

The term is made up from the word: “calo” (etymologically meaning to indicate "class"), which stands for our need to arrange and collect in classes. This self-regulation constitutes a warranty for our consumers, because we carry out accurate controls during every production stage, since the acquisition of raw materials through the relevant maturation stages and vinegar making, in any of its shapes and declinations - be it typical, traditional, and innovative.

At the same time, a classification takes into account quality intended as the relation among vinegar composition elements such as acetic acidity, sugar content, volume, density, fluidity, colour, clearness and typical synaesthesia scents, thus composing a product’s intrinsic quality and determining a reference scale.

Expressed in Romanic numbers, this scale is reported on every Mengazzoli product label and it is the result of a process directing consumers toward an informed decision based on varying destination uses. Thus, Egocalo is constituted by a combination of values that make up a complete product with its own points of strength: roundness, complexity, and quality.
