Balsamic Cream with Porcini mushrooms is a sweet and sour sauce, strongly characterized by mushrooms. Obtained by slow boiling of vinegar, mushrooms and grape juice. Then let rest for a few months in barrels, to round the bittersweet and make intimate the Porcini flavor. It is excellent if combined with aged cheeses like Parmigiano Reggiano or Pecorino.
