Cold soup with asparagus and green apple

Ingredients for 4 people:
  • 1 bunch of green asparagus
  • 1 Renetta apple
  • 1 shallot
  • organic vinegar from Modena I.G.P. Senso Azzurro Mengazzoli
  • extra-virgin olive oil
  • salt
Preparation of Cold soup with asparagus and green apple:

Mix 8 spoons of Organic vinegar from Modena I.G.P. Senso Azzurro Mengazzoli with 8 spoons of water. Pour in dies to make ices and froze in the freezer. Fry the chopped shallot in a pan with two spoons of extra-virgin olive oil and add asparagus and the apple (with its peel), previously cut in pieces.

Cover with some water, add salt and cook for about 20 minutes. Move to a mixer and if required filter. Let cool and  add at the centre of the dish the frozen cube of Organic vinegar from Modena I.G.P.” Senso azzurro Mengazzoli as last ingredient.
