Bread, hand, figs and Lambrusco wine vinegar

Ingredients for 4 people:
  • 4 slices of bread, 1 cm high
  • 12/16 slices of Parma ham
  • 500 g white figs
  • 4 red figs
  • 4 dried figs
  • 1 small glass of dark rum
  • 1 infusion with vanilla
  • 1 g sodium bicarbonate
  • Some drops of wine vinegar produced with Lambrusco D.O.C. Mantua
Preparation of bread, ham, figs and Lambrusco

Whip part of the figs, filter and lay the liquid on a layer of oven paper, let dry at low temperature. Make some crusty wafers to be crumbled irregularly.

Clean the fresh figs, cut in pieces and cook, get a medium density marmalade and add dried figs cut in dices, season with dark rum and let in infusion with vanilla.
Slightly toast the bread slices on both sides.

Lay a slice of bread on a pan, and cover with Parma ham.
Add the fig marmalade and the fresh cut figs in slices to decorate.
Pour on the pan a few drops of wine vinegar produced with Lambrusco D.O.C. Mantua and cover with the fig wafers.
