Bavarese with heavy cream

Ingredients for 4 people:
  • Apple vinegar with the Mother Mengazzoli
  • 10 g food grade gelatin
  • 4 Kiwi
  • 150 ml whole milk
  • Lemon zest
  • 500 ml cream
  • 3 tablespoons granulated sugar
  • powdered sugar

Begin the preparation of the Bavarese by softening the gelatin.
Heat cream, milk, lemon zest and sugar, add the food grade gelatin, mix and pour into the molds. Store in the refrigerator for 4 hours.
