Avocado and Pomegranate boat

Ingredients for 4 people:
  • 1 avocado
  • pickled onions
  • pickled gherkins
  • 2 heads of endive
  • pomegranate grains
  • Mengazzoli Pomegranate Vinegar
  • Extra-virgin olive oil
  • Salt and pepper

Blend 50 gr of pomegranate grains and filter the juice. Prepare the seasoning with oil, salt, pepper, Mengazzoli Pomegranate Vinegar and the pomegranate juice. Cut the avocado into little cubes, slice the gherkins, cut the onions into two parts and add the pomegranate grains. Season the mixture with the sauce previously prepared. Place the endive leaves on a plate and distribute the mixture into the inside of the leaves.
